Penne all`arrabbiata

Sure, you might know this dish from pretty much every Italian menu in the entire world… and you might not think of it as something outstanding, just a regular pasta dish. Sometimes you don´t need crazy, you just need really good, really savoury, a mighty meal! And it´s good to have comfort food, that does´t have to surprise you with every bite but gives you this warm feeling of security and comfort. Noodles are quick and easy to do- that´s another reason why they are the perfect comfort food. Try this “simple” pasta and you will taste and know why this dish is on every Italian menu.

  • 100g parma ham
  • 1 glas of pasteurised tomatoes ( or make the tomato sauce yourself with about 600g of tomatoes)
  • 1 bund of parsley
  • 2 chillies
  • 1 onion
  • 2 cloves of garlic
  • 2 big spoons of butter (or more)
  • salt & pepper
  • 500g Penne (for 4)
  • parmesan

Slice the parma ham, cut the onions and garlic. Boil water to blanch the tomatoes and smash them through a strainer to make your own tomato sauce. Boil water and cook the penne almost al dente. Don´t overcook- that´s important because you gonna continue cooking them in the sauce later. Place a big pan on the fire and melt the butter, add the onions and after a minute the parma ham, keep stirring, now add the garlic and chilli. Finally you add the tomato sauce. And yes it´s ok to cheat and to just add a glass (never a can) of pasteurised tomatoes. Let it simmer on low heat for a couple of minutes and keep stirring the sauce. Now get the noodles out of the water and add them to, mix well and let it cook till the noodles are al dente. Meanwhile you can chop the parsley and mix it with the penne. Add salt and pepper, take the chillis out and serve it with parmesan. So yummy!!! Nice with a good red wine…

Century Eggs

This is a very powerful starter! The spicy sparkling sauce goes very well with the slightly salty / nutty, jelly-like eggs finished with the fresh cilantro. Century eggs are one of my favourite bites but sadly you hardly find them on a restaurants´s menu. But it´s really easy to do, it takes max. 10 min and you have a delicious and good looking starter for your Chinese meal on the table.

  • 2 preserved eggs
  • 2 tablespoons vegetable oil
  • 2 tablespoon soy sauce
  • 2 teaspoons water
  • 2 teaspoons rice vinegar
  • 2 teaspoons sesame oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon granulated sugar
  • 1 medium clove garlic, sliced
  • 1 red thai chili, sliced
  • 1/3 cup chopped cilantro leaves

Peel, slice and arrange preserved eggs on plate. You can buy them in the Chinese supermarket, I prefer the duck eggs. Whisk vegetable oil, soy sauce, rice vinegar, sesame oil, salt, sugar, chill and garlic. Pour over eggs and sprinkle with cilantro. Serve et voila!  Yummy!
